Most likely they wanted to cement the idea that the bone used could have come from Edna's task work, so they could properly blame her for the crime. Right?
Which leads me to thinking that this wasn't some idiot going off on a rampage. They thought this through. We're probably dealing with a craftier killer then some of us might be giving them credit for.
